In a surprising twist, scientists at the University of Kentucky have unveiled a method to turn the waste from bourbon distillation into high-performance supercapacitors. This innovative breakthrough offers not only a sustainable solution for the bourgeoning whiskey industry but also has the potential to revolutionize the efficiency of electric vehicles (EVs) and the energy grid at large.
What Are Supercapacitors?
Supercapacitors are energy storage devices that function differently from traditional batteries. Rather than storing energy chemically, they utilize electrostatic principles to store charge on electrodes, leading to faster charging and a longer lifespan. Although supercapacitors currently have a lower energy density than batteries, making them less capable of holding large amounts of energy, their rapid discharge capabilities make them particularly attractive for applications in electric and hybrid vehicles. Josiel Barrios Cossio, a graduate student involved in the project, discovered that for every bottle of bourbon produced, distilleries generate up to ten barrels of waste known as stillage. This byproduct typically goes to waste or is sold as livestock feed—optionally less than ideal due to the challenges of drying and transporting it. Working alongside chemistry professor Marcelo Guzman, Barrios Cossio used hydrothermal carbonization, a pressure-cooking technique, to transform this stillage into usable carbon materials for supercapacitors.

The resultant supercapacitors crafted from bourbon waste can store significant energy. Notably, a hybrid design featuring both hard carbon and activated carbon electrodes could store energy up to 25 times more efficiently than conventional supercapacitors.
